Okay, two pieces of information that I was a bit hesitant to post, since they aren't exactly helpful.
I talked to a pretty reliable source at FIAT, who told me that the dash he saw in a pre-production Prima Edizione did match the outside body color. However, when I asked him what the graphite instrument panel (i/p) bezel meant, I was told that i/p bezel is in fact, the name they use for the usually-body-color piece of plastic across the dash. He said that maybe it was the material that was graphite (doubt it), or maybe they had changed it from when he saw it, but he wasn't sure.
I mentioned that I thought it was weird that the one he saw wouldn't have a graphite i/p bezel, since we were told that the graphite bezel was a part of the PE package from the start, and he agreed.
So there you have it. More not-exactly-helpful information to think about while we wait.
Also, Doodles, why is it so obvious that the prima (first edition cars) would digress so much from the iconic matching dash that is so unique to the 500?
